Pineapple in jelly

I have heard that fresh pineapple will stop jelly setting... will tinned pineapple set or not?

tinned pineapple will set in jelly if it's in syrup, if it's in natural juice it won't, it'll stay runny, like a thickish lumpy sauce. Its an enzyme in the fruit called protease that stops the gelatin setting, its the same stuff used in powdered meat tenderisers used to break down the tough fibres in meat before cooking Mercia XX
