I feel like baking a cake. Went to the cupboard and checked if I'd got all the right ingredients...

Aww poop ! I've picked up some sort of pastry flour in Carrefour... and there doesn't appear to be any baking powder in the cupboards. :-(

Anyone ever made a cake with plain flour and no raising agents?

Or should I just get my backside down to the local shop and buy some?

i've made cakes with s.r. flour and no baking poweder, but not without either.
It's all in the wrist action NoM - so put plenty of effort into the mixing of, and you might just get a rise.

Also... I have a tub of lower fat marg and a tub of Vitalite in the fridge... I don't suppose either of those are apt for making cakes...

This is not going to be a particuarly nice cake, even if it does rise ;-)
once its cooked you can't tell the difference between different kinds of margerines/ butters/ spreads.
Get to the shops !!!
Sorry - but it has to be real butter.
The real thing.
No excuses or substitutes.

Yeah, I guess. I would need to go and buy cream anyway... so I might as well go "mad" and buy some decent ingredients. lol

So what sort of cake would you guys make?
add soda water to your flour mix

Salla... don't you think butter is too heavy for a sponge?

My nan is an accomplished baker and she says there's nowt better than stork margarine for baking.
It probably wont be the same as you had in mind NoMercy but you can use plain flour in a fruit cake. Leave the fruit to steep overnight in an infusion of tea and freshly squeezed orange juice. Makes a really tasty tea bread type cake which freezes extremely well. I usually cut the cold cake in two and freeze one half for another day.
I made a three tier wedding cake for my neice last year was asked at the reception to make two more for some couples getting married have thought about making it a business at 62 years well maybe !!

Nice one, Millie... a wedding cake would be stretching my capability somewhat.

I was hoping to to a plain old victoria sponge and fill it with jam and cream.
