Thanks Darren - he has just started to inject so I was hoping to offer him something that wouldnt get him too stressed about his insulin calculations - but if pavlova isnt a problem I could go with that - I dont like to keep ringing up and asking his wife I want her to relax too !!

Here is a recipe for no-sugar meringues......there are quite a few if you google. You can leave the chocolate out.

make a small fresh fruit salad and put sugar substitute instead of sugar, or a small plate of an exotic fruit e.g fresh lychees with top peeled off and the bottom left on to make them look good and a few thin slices of melon.
make a point of saying he has not been forgotten but how would u like to be offered rice pud when all the rest get pavolva ? good luck, diabetics are not hard to please. |

you could make a reduced suger trifle for everyone, suger free jelly poured hot over fresh soft fruit, leave to set,suger free custard over that and fresh cream to decorate with more of the fruit, lovely, I speak as a insulin dependant diabetic of 33yrs.

The sugar free pavlova went down a treat - infact he ate most of it and said it was a bit like crispy candy floss with cream and fruit - very nice. I shall try the trifle next time - than you for your help
