When in Prague I had this lovely red cabbage served as a side dish. Does anyone have a recipe for this?

I have a recipe for Polish Red Cabbage Salad.  It's from Rose Elliot's book - "A Foreign Flavour".  I hope this is similar to the dish you have in mind.  It srves 4.

450g (1lb) red cabbage

2 eating apples

50g (2oz) raisins

1 tablespoon lemon juice or red wine vinegar

2-3 tablespoons oil

2-3 teaspoons caraway seeds

sea salt

freshly ground black pepper

Wash the cabbage, then grate or shred it as finely as you can.  Cut the cored apples into small dice and wash the raisins, then add these to the cabbage together with the lemon juice or red wine vinegar, oil, caraway seeds and salt and pepper to taste.  Stir well to make sure everything is thoroughly mixed together.
