i presume the cooking times stated on pataks paste are to ensure the meat is cooked fully so am wondering how to adjust so i can make a mushroom curry. does the cooking time also alow the spices to be cooked properly? if so, i need to put my mushies in at the end of cooking.... if not, i just need to drastically reduce the cooking time. can anyone clarify this for me?

I'd guess that cooking them in the sauce for 15 mins would be enough to cook them and let the spices permeate.
You could also coat them in the paste for a few hours to absorb all the flavour and then just fry for a couple of minutes, add the water and simmer for about 10 minutes. It's the frying of the spices that brings out the flavour.
