the sauce for my spagetti bolognese is to sweet
can anyone tell me the best way to unsweeten it

Adding something like garlic or chopped peppers should take some of the sweetness away or if all else fails a beef stock cube crumbled into the mixture should do the trick
Add tin of peeled tomatos & salt and more oregano.
How do you make your bolognaise sauce ? I use red wine, passata and garlic. I also add thyme and oregano and thern just let it reduce down....gorgeous.

Some chefs even advise adding a bit of sugar to bolognaise sauce.
Are you talking about shop-bought sauce? If so, that's always sweet. Far better to make your own.
How to make your own:
1 1/2-2lbs beef mince
2 sticks 0f celery-diced
1large carrot-diced
2 med onion-chopped
2 fat cloves garlic-crushed and chopped
2 tins chopped tomatoes
2tablespoons tomato puree or paste
dried oregano+basil....1 tablespoon of each
1/2 cup red wine
1/2 cup milk
olive oil
Saute the onions,carrot and celery in the olive oil til soft,add the garlic and continue to cook for a few min. Add the mince and turn up the heat a bit. Let brown while stirring continuously.
Add the herbs and the tomatoes, and the red wine-bring to
the boil and then reduce to a simmer. Add the milk-a few tablespoons at a time-every 20 min or so.....do not allow to dry out. Let bubble away for about 1hr20 min on the lowest heat. if wanted you may add a beef stock cube. If the tomato paste makes it bitter,a quarter teaspoon or less of sugar will help.

Sorry to all those above, this recipe is better than any other in the world! And yes its worth the 90 minutes simmer.
