Had the loveliest meal in Little Italy in New York, lovely fresh al dente pasta with a very fresh tomato sauce and some fresh herbs and garlic.
So simple but delicious.

2-3 crushed garlic cloves, 2 red chillies finely chopped. Warm through in 3-4 tablespoons olive oil and mix with spaghetti. Lots of bread and parmesan. Gorgeous.
Best with lots of red wine too.

For 2meals:
1 cup of boiled pasta
half lb strong cheddar - grated
Teasp tomato puree
half pint milk
pinch oregano
Put all into bowl, stir, and bake in oven (gas 5) 30mins. Delish, easy & quick

Onion chopped finely
Tin chopped tomatoes
quarter bacon chopped
hot chilli powder
teaspoon dried basil
quarter pint chicken stock
tablespoon tomato puree
tablespoon olive oil
Heat oil, fry onion until soft, add bacon and chilli powder to taste (try with small amount first,) cook for 2 mins
add tomatoes, stock, tomato puree and 1 teaspoon dried basil, simmer for 15-20 mins
Mixed through cooked pasta, penne is best

For 2 people - 2 mugs pasta twists, 1 medium leek, 4 slices ham (cheap will do, expensive is better), tub of spinach and ricotta sauce from fresh pasta section in supermarket and some grated cheese.
Cook the pasta with the chopped leek until both are soft - drain. Add sauce and ham to pan and heat through. Mix in pasta and leeks. Put in a grill proof dish, top with cheese and brown under grill. Serve with red wine (and salad and garlic bread if you want to make it posh).
