Anyone got a recipe for a rice dish using salmon (fresh or tinned)? Preferably a recipe that uses few ingredients and is easy.

Hi Monty,

I do these 2 dishes regularly:

Salmon, marinaded in Teryaki (buy in food shops like Sainsburys, Tescos etc)

Serve on a Rice bed with a side salad or stir fry chinese veg then add rice.

The other dish is:

Lime juice, wholegrain mustard and honey. Mix together, pour over salmon then grill till golden.

Serve on rice with fresh veg or salad.

Happy Cooking.
* once Salmon marinaded in teryaki, then fry in light olive oil till cooked to desired doneness.
Fry your onions, tomatoes and peppers.
Add some stock or little wine and sweeten to taste.

Open tin of salmon and add to frying pan.
Cook until warmed through and serve on bed of white rice.

Keep forgetting about those recipe cards. will pick one up today - thanks.
Have got the card and ingredients and am gonna try it today, will let you know how it goes.
what is teriyaki.....is it similar to soya-sauce? Is it sweet/sour/salty
Teriyaki sauce is a Japanese marinade typically made from soy sauce, mirin, sake and sugar. It is used to marinate meat, poultry and seafood and can also then be simmered to make a sauce served with the cooked food.

Just makes a change sometimes Terambulan :)

Monty, I made that recipe and it was not bad at all, mrwarpig thought there should have been more salmon in it but I thought it was just right.
Is this the one Warpig?

Salmon Risotto

9 ounces salmon, skinned and cubed
1 pint chicken stock
1 tablespoon oil
1 tablespoon butter
1 large onion, finely chopped
8 ounces risotto rice or arborio rice
1/4 pint white wine
1/4 cup basil (or to taste)
1 ounce pine nuts, toasted
2 sun-dried tomatoes, finely chopped
1 tablespoon parmesan cheese, grated

Heat the stock in a pan and simmer gently.
In another pan heat the oil and butter, add the onion and cook for 4 minutes, until soft.
Add the rice and stir for 2 minutes or until the rice is transparent.
Stir in a ladleful of the hot stock, and a little wine. When all the liquid is absorbed, add a further ladleful of stock and wine. Continue adding the stock and wine, until the rice is cooked and has a creamy consistency.
Add the salmon, basil, pine nuts, sundried tomatoes and Parmesan. Season well and serve

I presume it's either cooked salmon or smoked salmon?
