Nip over to Edinburgh and visit Valvona & Crolla. Supposed to be a wonderful Italian Deli. I believe it opened in the 30's.
Sarti on Wellington street - hotdot. Don't know if it's the oldest but it has everything you could possibly need from a deli. As good as Valvona& Crolla is there's no need to leave Glasgow and I don't just mean for deli's.
Try Peckhams in Glasgow for your meats.

Fratelli Sarti
133 Wellington Street
Glasgow, G2 2XD

An authentic Italian deli in the centre of Glasgow, how unusual. If you've eaten at the terrific connecting Fratelli Sarti restaurant then you'll know just how high the standard of produce is here. Fresh pasta rubs shoulders with parma hams, aromatic pesto, the most virginal olive oil known to man and sun-dried tomatoes so rich in flavour and colour that you'll drool all over the shop. A vast selection of wines is also sold and there's usually someone in choosing a bottle to take next door to go with the dinner they're planning to order. If people eat it in Italy, they'll have it here only better, fresher and probably a bit more expensive.
