What ingredient can you put in spicy food to cool it down if its too hot when cooking.

Try natural yoghurt.
I think that putting in potato draws out some of the heat. Serve with banana/cuccumber and the yoghurt.

Any fat will do it, try and stir in a little milk
If you've made a chilli that's too hot, I highly recommend adding mayo as an alternative to the usual sour cream. Sounds gross I know, but it's well worth a try. It's cheaper, doesn't make it as runny, plus I find it cools the heat in the chilli without cooing the heat in the food to the degree sour cream does. I tend to stick it out on the table rather than add it to the pot then people can add it to taste, also it makes the chilli easier to re-heat if there are any left overs, as it can separate.
