Stilton cheese

Hi
A friend knows that I adore Stilton cheese and gave me1lb from the local dairy, I fancy a change from the usual Cheese,biscuits + Port, so does anyone have the recipie for Leek + Stilton soup please?

Hi John, sweat off chopped leeks & onions in a big dollop of butter,add salt & pepper. Take off the heat, and stir in a couple of ozs of flour untill everything is absorbed and coated. gradually stir in a good pint of milk or milk/water, or milk and veg/chicken stock. Slowly bring to the boil stiring until thickened and then stir in cheese (as much as you like) continue stiring till melted, Enjoy.

how about a leek and stilton bake? Cooked leek, stilton crumbled on top, white sauce ( bisto make a good instant one) topped with mash,maybe a sliced tomato or two on the top.....in the oven until its all nicely melted together and a bit golden on the top..........mmmmm lovely.
