I have my parents coming over for easter sunday and not enough space in my oven to cook both meat and veg! Does anyone know how to cook a joint of beef in the slow cooker and how long I should cook it for?

Brisket .top rump.silverside any cut really .Depending on the size of the joint and what time you want to serve lunch I would either cook it on slow overnight or on medium for six to seven hours.
I just bung in it with a little water if there is not much fat on the joint .If there is a nice bit of fat then no water as this will make a lovely stock for the gravy.Enjoy your lunch !
I agree - just cook it as long as you can, and you cant go wrong, and it will melt in the mouth and you will have some good stock for gravy.
You can cook lamb the same way and pork too.
Lamb is good with rosemary in the pot and some garlic and mint
