maize instead of potatoe

Hi I have just had a holiday in Maderia and one place I went to eat did maize instead of potatoes. They where small cube shapes and delicious. would anyone know how you make them.?

It was probably polenta. You can buy it from most food shops, either in it's dry form, where you add water/stock and cook it yourself, or ready made in a vaccuum pack that you slice into desired shapes and grill or fry. I'd make it myself, for preference. It's dead easy. You make it a bit like you would real porridge, stir in a bit of butter or oil at the end of the cooking time, then tip it out into a greased dish to cool completely. It sets solid as it cools. You can then cut it up into whatever shape you like, then either brush with oil and stick under the grill til crispy and brown, or fry in a non-stick pan. Yum!

BBWCHANT yes many thanks I did look it up but sadly it was in London.And I live in somerset.. but I have kept it on my favourites. once again many thanks for replies. Brenda x
