BBWChat kindly posted recipes for warpig earlier this week in order to use up a surplus of chick peas - http://www.theanswerbank.co.uk/Food-and-Drink/ Recipes/Question327273.html - the Crunchy Jumping Chickpeas sounded so good, I just had to try them out. I opened a 400g can of chickpeas, rinsed and drained them and added them to hot olive oil (about 2 tablespoonfuls) and then added some chilli powder, cumin seed and black pepper and fried them until they were jumping around. I then placed them on some kitchen paper to absorb any excess oil, shook a wee bit of salt over them and allowed them to cool down. They taste absolutely gorgeous but are certainly not crunchy ! Any ideas how I can give them some crunch ?

Looking at the recipe I think you would have to deep fry them to get a bit of crunch. Probably hot oil. As chick peas are moisture full dipping in hot oil would disperse this.
Jugglering if they didn't get crunchy enough for you - could you fry them and then take them off to get cold and fry them a second time? Also - maybe a different brand of beans might work better - maybe not - but worth a try:) Glad you enjoyed the recipe!

Ha ha - I just took the original recipe at face value and followed its instructions - rinse and drain the chickpeas. There wasn't enough oil (8 ml) to deep fry them - maybe that is the answer !

They have been fried again from cold - (not in deep oil) and are still not crispy but do taste gorgeous. Next time I will dry them off before frying, add a bit more oil and see what happens. Thank you lovely people.
OR Jugglering you could drain and dry them - coat them in olive oil and sprinkle the herbs/spices on them and spread them out on a pan in the oven - they could get as crunchy as you wanted them!!!

Thank you BBW - now why on earth didn't I think of that ! What a simple, elegant solution :)

Jugglering was last seen heading off towards her kitchen cupboards in the hope that she will find another can of chick peas to play cheffie with....
