New ideas for lunch please.

Hi guys.I'm not on a diet as such,but I am trying to make better choices foodwise.I have swapped toast and butter in the mornings for porridge,which I must say I love and realy fills me up.And evenings are fine with meat,fish,veg etc.But I can never think of anything different for lunch.Im sick of sandwiches,and soup.Any good fairly healthy ideas for lunches??

Hi PinkFizz, how about a small helping of pasta with a tomatoe sauce ie: dolmio stir in. The itallian chilli one is nice. And a bit of parmesan on top. YUM YUM
I always make more dinner so that I can pack up the leftovers for lunch the next day.

lol - well I work from home so I can pretty much rustle up anything within reason,but I get so sick of leaving it too late and then having a sandwich and a bag of crisps!!

Amazing how porridge really does fill you up so much - don't know why!
Is there anything that you really dislike PinkFizz ?
Hi Pink Fizz, I work from home too and always end up throwing a sarnie together, but the last 2 days I have had a jacket potato and they have really filled me up. There are so many choices of fillings, tuna and sweetcorn or beans and cheese are my favouites, but I am sure that you could come up with something more adventurious
omelettes with various fillings?
salads, ie chicken bacon and advocado, pasta salad, tuna , prawns etc

Hi Larkin.I hate olives,raw peppers,cauliflower and celery but apart from that I eat most things!
Good job I didn't post an answer before I asked Pink Fizz - because my fave involves olives, pepper, onions, butter beans, chopped chilli, celery, toms and cucumber all mixed together with balsamic vinegar and a little olive oil. Oh and you can add green lentils too. It's yummy but you obviously wouldn't like it very much LOL.
I don't like sandwiches very much so tend to have salad, soup or baked potato (with marmite and lettuce -yum !).

This is what I ususally have. 3 Ryvita crispbreads, covered with a soft cheese. I use the Weight Watchers kind, but you could also use Philadelphia soft cheese. Then I top it with a spicy seasoning, then a few grapes. Finally, I top it with a couple slices of lunch meat turkey. It's SOOO good, and healthy!!
I work from home also. I am not a real cook - but when I do cook at night or on weekends, I make lots of extra of everything and put it in plastic containers for the freezer. When I am busy - I just pop them in the microwave and I have a meal instead of a sandwich.
