Anyone know of a more healthier way of cooking this? Is it possible to bake it (for example)?

Baked Brie and Camembert is wonderful as a less greasy alternative.

Use one of those whole camemberts or baby bries which come in a little wooden (not paper) box. Remove the plastic or waxed paper wrapper and replace with foil or baking parchment. Pierce the top with a skewer a few times and (optionally) drizzle a little dry white wine onto it and then bake it in a hot oven for about 20 mins

The rind should hold it all together and the pierced top will prevent explosions of boiling cheese.

Serve as is with crusty bread or something to dip into it - a bit like raclette I suppose.

Have already prepared it by cutting into individual triangles and dipped in egg/breadcrumb, but i imagine this will help hold it together. Will follow your recommendation to prick it to prevent mount versuvius landscapes - many thanks rekstout
rekstout's way is my favourite, with the addition of a topping of cranberry, redcurrant or similar sharp fruitiness (fresh or sauce).
