I want to start taking salads for lunch next week but the thought of lettuce everyday bores me - anyone got any ideas on creative salads??

the golden glow one is great!!!
Prepared bag of watercress, cold, boiled jersey royals, cheese shavings, crispy bacon bits, and a dressing of olive oil, vinegar and honey ......mmmmmm You can make a big bowlful in advance and keep in the fridge - split into three or four portions -day by day - and take the dressing to work in a tub to add at the last minute.

fennel, chicory, cucumber and balsamic vinegar


tomato, red onion, feta and cucumber

A bed of crispy iceberg lettuce, cherry tomatoes, beetroot, cucumber, beensprouts topped with some fetta cheese and italian herbs

grated carrot; grated red or white cabbage; beetroot; olives; halved cherry tomatoes; chunky cucumber; celery (add non-salted peanuts or walnuts & sultanas); radishes - take your pick of some or all. Then you can add a topping of your choice ie tuna, pasta, chicken, cheese, egg.


Take your dressing separately and put on just before you eat.

Tinned butter beans (Waitrose do the best ones), combined with a mixture of lightly fried onions, red pepper and mushrooms. Other tinned beans such as cannelini do just as well


This mixture is also nice with some cooked chicked, or tuna stirred in i you want some extra protein.

gosh you can add anything to a salad that your imagination lets you. I like to throw in as much as poss. I use Cos lettuce as I think Iceberg just taste of water. The cucumber, cherry tomatoes, spring onions, red onions, sweetcorn, peppers, sugar snap peas chopped or even defrosted peas, radishes, crispy onion, bacon crispies, croutons, cress, a chopped boiled egg, raw broccoli, raw cauliflower, cellery.


I make my own dressing with biopot yogurt and I smother the salad in it.... mmmm love it
