Wedding Cakes.

My daughter has asked us to make her wedding cake and suggested having one of the tiers as a cherry cake instead of the traditional version.Does anyone have any idea how long the cherry/sponge would stay fresh AFTER it has been iced etc. to match the other tiers? any help would be appreciated,thanks.

I'm no baker, but sponge doesn't usually keep long does it? I'd make it last, keep it in a tin until required then make sure that it is dished out first!
If you do a traditional sponge it won't last long at all. I've got a lovely cherry almond cake recipe if you want me to post it for you - it actually improves with age!

Many thanks both for answering;they say it is a womans priveledge to change her mind and my daughter is no exception!!she is still not sure whether to have a complete traditional one,or something completely different which would include a cherry almond cake,but whatever she finishes up with and whether we make it or not,yes please Plocket,I would appreciate the recipe,sounds good .Thanks in advance.

CHERRY ALMOND CAKE


8oz flour; 4oz ground almonds; 1/2 teaspoon baking powder; 4oz cherries (more if desired!); 8oz caster sugar; almond essence; 8oz butter or margarine; granulated sugar; 3 eggs; salt


Heat the oven to140 degrees C or Gas Mark 1


Cream the butter and the caster sugar. Add the eggs and a little flour, baking powder and a pinch of salt. Add the ground almonds and sieve the remaining flour. Add the cherries and almond essence then sprinke the top with a little granulated sugar. Bake in an 8 in ch round cake tin (greased) for 2 1/2 hours. This cake improves with keeping.

Many many thanks Plocket will give it a trial run! Actually,my daughter is now moving towards having her cake done professionally but who knows!! she may revert to plan A.The wedding is not until 23rd December (her birthday) and already plans are feverish!! still it's all good fun.
Well I wish you all the best. Mum made my wedding cake and it was fantastic - and it meant so much that my mum had done it for me. Hope the plans aren't too stressful, and enjoy the cake!
