This traditional dish usually consists of shoulder of lamb or mutton, lamb stock, potatoes, carrots and pearl barley.
Don't forget the leeks. And you can use water instead of lamb stock. The other important thing to remember, although not an ingredient, is that the lamb is bound to be fatty so you should make the dish far enough in advance to cool and skim before eating. Make sure you reheat thoroughly.
