i would like to slice them and cover with a cheese sauce how long and at what temperature should i cook them?

If the spuds are already cooked then as long as they take to warm through. If you want to brown the sauce then put them under the grill.
Why not saute them then you can see when they are hot enough.
Surely if they are cooked they don't need cooking.

Just warm them enough to eat.
There is no precise answer as none of us know how deeply you are layering your spuds.

A shallow dish with room temp spuds and freshly made cheese sauce would take around 25 mins by my estimation.
Reheated food must be hot enough to kill any bacteria it may have picked up.
I'd slice them, reheat them in the microwave and pour the cheese sauce over - then pop the lot under the grill.
190 (170 for a fan oven) degrees C or 375 Fahrenheit or gas mark 5 for around 25-30 mins from chilled. Room temperature I would reduce that to 20-25 mins.
