I went to my local Waitrose to buy some stewing steak to
cook in my slow cooker.

Not seeing any in the display section I asked the butcher at
the meat counter why. He said they didn't 'do it' any more but
didn't elaborate.

When I got home I went on-line and it said ' this product is
unavailable'

Is there some sort of health issue of which I'm unaware?

Most likely to be because it is now (allegedly) summer and we're all out BBQing so stewing steak has made way for burgers and kebabs.
If you want casseroles in the middle of summer, you must think ahead and buy/freeze earlier in the year. Most stores will be overloaded with all types of BBQ stuff....there isn't the room for things that won't sell quickly.
