Only asking as I'm curious about this!

Had some crackerbread for my lunch. On top of that was cream cheese and parma ham which I then put into a plastic box and brought to work. When I took them out at lunchtime, they had shrunk to almost half the size and were soggy - well perhaps not soggy, but they certainly weren't crispy anymore and you could kind of bend them!!

Just wondering what might have made them go like this? The cream cheese? Being in a plastic box? Any ideas?

I suspect the cream cheese
Both really, there will have been air in the box and combined with the moisture from the cheese the crackerbread becomes a sponge.
Likely to be the cream cheese

It looked so nice this morning too!! Obviously need to put the cream cheese on and eat it straight away next time!
In the airtight box place a small pot of cream cheese, some ham slices and crackerbread in foil - add a plastic knife for spreading and assemble at lunchtime.
