I have just come back from scumping with the kids and have rather a large amount of blackberries.  As I am the only one in the house that likes pie can anyone give me a suggestions about what else to do with them, or if anyone has a recipe for a fool or mousse type thing.

My kids thank you.

Why not freeze them - on open trays in a single layer until they're frozen and then bag them up. You can then use them throughout the year.

My mum used to make blackberry bombe which was blackberry puree, whipped cream and broken meringues folded together and frozen.

I too have just come back form blackberrying. I intend to make some into a coulis. Put the blackberries and the sugar in a saucepan, use 1/2 the volume of castor sugar as blackberries. Place the pan over med-high heat and bring to a boil. Pass through a sieve to finish, then serve with ice cream etc.

, or google blackberry recipes

To make a fool heat them in a pan with some sugar depending on how sweet you like it,heat till the juices run don't boil as it loses its fresh taste strain thru a fine sieve push the pulp thru and scrape the sieve cool the puree then fold into whipped cream.

As mentioned above the puree freezes really well

Go with normyc's advice I did this with blueberries & strawberries  goes great with natural yogurt too.

Hot Chef, did as you said but the end product seems a bit runny, not the consistency I would expect a puree to be.  Have I gone wrong somewhere, I didnt put loads of sugar in as the berries were quite sweet already.
..summer pudding is my all time fave, heat blackberries, raspberries, strawberries, blueberries , redcurrants,(anything you have to hand really) in a saucepan with a splash of water (or cassis) add sugar to taste , until juices start to run, cool, dip slices of stale while bread in the juice , line a bowl with the bread making sure there are no gaps, fill with the fruit and juice, top up with more bread, place a saucer on top, weigh it down with a couple of tin cans or anything heavy, leave in the fridge overnight ..serve with cream...lush...
Wizz some together with natural yoghurt, fresh single cream and a bit of honey for a lovely smoothie too - each ingredient according to taste, just however you like it.
How about a blackberry and apple crumble?
Use them with other summer fruits to make some fresh smoothies. Mmmm...
I made blackberry jam last year and gave jars away as presents.  It went down a treat as you can't buy blackberry jam with whole blackberries in anywhere!  It was really simple: just blackberries, jam sugar and lemon juice.
Mmm, might have to go blackberry picking this weekend!
I'm jealous now - blackberries nowhere near ready yet up here.
