buy a whole side of salmon with the skin on,make a mix of chopped dill,coarse sea salt and granulated sugar 50% dill 25% salt &25% sugar.packit around the salmon  in a deep non reactive dish eg stainless steel or glass and keep in the fridge turning every day for 3/4/ days depending on the thickness of the salmon
