Coconut Jelly

I have now tried 3 different internet recipes to make coconut jelly and each one has been a failure. When I put it in the fridge to set it always splits.
Does anyone have a foolproof recipe please?

If I didn't put it in the fridge it would be called a coconut jelly flavoured drink ;-)
what's the setting agent?
Morning mrs o, would it not set if you just put it in a cool place though mrs o but not the fridge.
could you not just make the jelly and sprinkle the coconut on top ?

not as daft as it seems, it should overnight-ish if you leave it in a cool place

the recipes are all basically the same - light coconut milk, gelatine & sugar
Doh.
I think it's the initial heat that's probably splitting it actually, try getting the liquid you're adding it to as cool as practically possible
