Unbelievable as it is, I have never made this or even tasted it! I have oodles of veg left over from our lunch today so can any kind person give me any tips please?

mix all your veggies together and stick them in a frying pan, when thy start to brown off serve, job done.

The whole point of bubble and squeak is that you don't have a fixed list of ingredients; you simply throw in whatever you've got. However this recipe might be a good starting point:

Brown a chopped onion, mix it with all your leftover veggies and chop the lot fairly finely.
Mix well with lashings of soft mashed potato, form into patties and fry until heated through and slightly crunchy on the outside.
Great with baked beans, HP sauce and cold meat.
Nice with a fried egg on top.

Always make sure i have lots of stuff left over from a sunday roast.

All the remaining spuds, veg, parsnips and stuffing get blitzed in the blender until medium chopped. I then add any remaining cooked meat and then form into patties and shallow fry.
Depending on the veg I might put a egg in with the leftover mix to help bind it together. Optional though.

Thanks very much everyone for your helpful tips. I am going to try it tomorrow, I like the sound of forming veg and mash into patties and frying.............. sounds yummy!
