I am going to make an exotic sounding Turkestan Loaf. It has numerous different seeds, all but one kind I have been able to get. The missing one is 'cracked rye'. No luck in the supermarkets, and blank looks in the Polish delis. Given that there are 7 different seeds in the mix and it needs only 30g of each, what can I substitute for the cracked rye. Or can I live without it. Many thanks.

Buy some normal rye and hit it hard.

How many Turkestans for into this loaf ?
"GO onto this loaf"

Why is the typo fairy always getting at me ?
You could use cracked carraway seeds or you can but rye online from Whole Foods and Amazon...but they are in 1kg bags.

Thanks OG. I didn't see any uncracked rye in my search! Depends on how big I make it I guess!!!
Have you got any Asian Supermarkets/Market Stalls near where you live ??
If you have, try them
Organic health food type shops maybe ?

Just googled Turkestan bread as I had never heard of it. It does look really scrumptious - is there anywhere I can buy it. Thanks
Personally, I wouldn't stress about it, it will be just as good without.

Thanks for all the responses folks. It can be had on-line of course so I will get it that way. I found the recipe in a book of different bread recipes 'Ciabatta to Rye', the Turkestan loaf took my fancy and a couple of friends have urged me to give it a go. Thanks again.
