Crispy Chicken

When we were inn Austria a few years ago, we were given the above for an evening meal, and I`m sure they were cooked in heaven by Gods head chef. I have not tasted anything so wonderful since. Does anyone have any idea, other than returning to Austria, the most likely recipe I`m referring too?

is there any danger of food poisoning cooking a whole chicken in this way, due to low initial cooking temperature? does the skin go crispy? do you put veg in the bottom?...
