left over egg whites

I freeze mine in a sandwich bag and write on the bag how many is in there.

If you mix them in with whole beaten eggs to make an omelette, it will come out super fluffy

You can buy a book called "The other half of the egg" which will give recipes for egg whites and egg yolks. It is listed on Amazon and Abebooks among others.
