making a carrot cake, looking for a recipe for the topping TIA ?

quick one I use tub of philly, two heaped teaspoons of icing sugar and zest of a lemon blend well and spread thickly on the top

8oz low fat soft cheese, 2 tsp clear honey, 1 tsp lemon juice mixed. plus chopped walnuts sprinkled on top

I use a tub of soft cheese with the pineapple through it and mix with icing sugar - its delicious and a wee bit different

If you want to be really clever candy fine shreds of carrot in sugar syrup and dry on a sheet of baking parchment to decorate the top
