I just mix a load of green chillis, coriander, ginger and some lime peel with coconut milk, doesnt look as green as what you buy in the shops but tastes authentic enough.....

Put the chicken in a bowl with the green curry paste and let it marinade whilst you do the rest.. Chop an onion put this together with oil, garlic, ginger in a pan, fry for a few minutes then add the chicken. Fry this off to seal it then add coconut milk. I usually add some lazy green chililes as well, but depends on how hot you want it. You may want to add some veg to fill it out a bit, like babycorn, mange tout, broccoli etc..

Let is simmer away for about 20mins.. est voila a lovely curry you shall have.
