Vegetarian christmas dinner

My mum is vegetarian, although she eats fish, which I don't count as a true vegetarian, but hey ho, I usually do her a salmon steak for Xmas and she is happy with that and the veg that we have,and I do a parsley or cheese sauce for her to go with the veg. This year I've bought rainbow trout fillets which I plan to do "en papillote".
Would like suggestions for a suitable sauce to go with her veg, as I don't want her meal to be dry.
