What are your favourite type of sausages?

There are loads of different varieties available now, but are there any you would like to see?

I'm thinking of buying a sausage machine and was just wondering what delicious ideas you guys would come up with (for delicious read "wacky" in the case of some people......)

my favourite sausage is from Morrisons it is pork and spicy chorizo and is lovely, their pork and sweet chilli are rather nice too.

Hope you get on well with your sausage machine. I bought one many years ago as I wanted to make sure that I knew what were in the sausages I was feeding to my kids, unfortunately I think I only used it a couple of times. I did lamb and mint, but found them very greasy. I can't remember what else I did, but I seem to remember that I had trouble sourcing the casing, (didn't want beef casing as BSE was in the headlines) Let us know how you get on, I may have to dust off my old machine, if I can find it :)
