What to cook?

I have to cook lunch for ~15 on Sunday. I don't know of any dietary requirements but want to include a veggie dish to be on the safe side. It needs to be something that can be kept warm without any detriment in case they are delayed.

I am tired of making curries/tagines/casseroles etc, but cannot think of anything else that will suit. So far I've been thinking of making two pasta sauces with suitable salads to accompany the finished pasta dish.

Does anyone have any other ideas?

Mmm, could use kale instead of spinach to make it seasonal. Not a bad idea Tiggs.

....I forgot to mention it has to be a seasonal dish!
Shepherd's Pie, Chilli con Carne with rice, sweet and sour chicken with rice - all these can be made with Quorn (meat replacement)
I always opt tor a massive cauliflower cheese with penne pasta baked in it. Some thick slices off a good ham for the carnivores, salad, fresh crusty bread and butter. A glass or two of your favourite wine, happiness is achieved. I like a little chilli as well as mustard in my cheese sauce.
Ooops! Just realised cannelini is a bean. That should have been cannelloni.

Meat substitutes can't be used! Having chilli tomorrow. Did cauliflower/Macaroni cheese recently with crispy bacon.

I might just send them all to the chippy and the veggies can have a pickled egg instead of fish ;-)
What about stuffed peppers or ratatouille with garlic and rosemary roasted new potatoes?

Great idea NoM, just doesn't tick the seasonal box.

I'm starting to contemplate a couple of veggie gratins - leek, kale, celeriac etc and a slow roast joint of pork with boulangere potatoes. Just seems a bit dull but won't take long to throw together in between my 'real' work.
I thought cooking for 15 would be real work!
How about goats cheese and caramelised onion tartlets which you could decorate with a sprig of holly?
What about a cheese terrine to start with with a spicy apricot chutney or a beetroot pickle. Then filo pastry (or even potato pastry) veggie parcels with a spicy tomato sauce?

I'm planning on doing a cheese terrine/savoury cheese cake with a beetroot chutney as a starter around Christmas/New Year!

This isn't meant to be an impressive meal just a good wholesome lunch using seasonal produce, as opposed to festive.

I like the idea of making up some pies/pasties but not sure I have the time tomorrow/Sunday. I might see how it goes, if all else fails chucking a hunk of meat in the oven will be quick and easy!
