What I have always believed was the answer is actually contained in the web-page offered by In A's link above! Specifically, that double Gloucester is made with a mixture of morning and evening milkings...hence, 'double'...whilst single Gloucester is made from either one or the other. It's not really to do with thickness of the finished product, I don't think.
