Quark has very little flavour on its own. (Think of solidified plain yoghurt and you're getting somewhere close). It's useful for cooking but fromage frais is cheaper and will produce similar results.
Quark is not high in fat and is quite a healthy cheese. In Germany it is often whipped, then salt and pepper added and some finely chopped onion. It is then spread on dark German bread, Pumpernickel or if you are wanting to watch your weight then on ryebread. It has many other uses, makes excellent Cheese cakes. It can also be whipped into a desert to which a little sugar and fresh fruit is then added. I buy it regularly and make a Fine German Cheesecake with it.
Mr. T has just made a strudel with it today. With sugar, dash of lemon and raisins - lovely! We use the 20% fat variety. In Germany it's Quark, here in Austria we call it Topfen.
Yes, it is lovely in strudel! You can always get it at Sainsburys, Morrisons and Lidl. Not sure about the others. I used to have it for breakfast on some German farmers bread with salt, pepper, a little chopped onion and a few slices of tomato. Very refreshing and very healthy! Not sure how much I pay for it, but am getting some tomorrow so will post the price then.

Tara, you lucky lady living in Austria! One of my favorite countries. I lived in Germany for 28 years.
I'm even luckier having a husband who bakes!
We eat loads of it on rye bread with apricot jam.
Morrisons are doing Ehrmann Quark 500g tub for a pound at the moment .
It makes lovely cheesecake and you can use it in lots of sweet and savoury recipes
You can use it srcambled egs and mashed spuds instead of butter and in pasta dishes as a replacement for full fat cream cheese.

I've only ever used it for Cheesecakes. I had no idea you could use it for so much more!
I used to get mine from Tesco, but they don't seem to do it any more...
