Make your mayo with lemon juice instead of vinegar and add some grated lemon zest.

I have not idea how to make mayo and wouldn't the zest leave bitter bits of lemon in the mayo?
Not if you grate it. To make mayo - If you have a stick blender, it's dead easy, but it's equally easy with a balloon whisk. 1 egg yolk, 1 tbsp some acid, wine vinegar or lemon juice will do. Touch of dijon mustard. Oil (do not use extra virgin olive oil as the taste is too powerful - a mix of sunflower and light olive will do - or all sunflower. In a bowl, mix the egg yolk and acid. Gradually drip in the oil, whisking all the time until the consistency is right. Add any other flavourings you like - chilli perhaps, or garlic. It's your mayonnaise - make it to your taste.
what's it for?
i ave grated lemon rind in my mayo before now and it was ok. Just wondered if it was to go with fish, as pesto with mayo is lovely.
