can't decide what to make, some chinese 'money bag' dumplings with ginger, spring onion, five spice and soy sauce, or a pork and ham meatloaf with onions, sage and a little bramley apple.

that sounds really nice mercissounds, can you give a recipe for the dumplings please?

Minced pork wonton dumplings

1lb minced pork
3 Tbsps dark soy sauce
1 heaped teaspoon minced ginger
4 finely sliced scallions (spring onions)
2 cloves garlic crushed or minced
1/2 a teaspoon of five spice powder
2 drops seasame oil (not really necessary, but gives a wonderfu nuttiness and aroma
1 small egg, beaten
1 pack bought won ton skins




Mix the above together and let set in fridge for a half an hour. To form dumplings: (Using purchased wonton skins) Place a tbsp in the center of the skin. Moisten edges with water. Fold up, sealing all edges.

To steam: Over a pot of boiling water put the dumplings in a bamboo steamer, lining with lettuce or cabbage leaves keep them from sticking. Steam about twenty minutes. The skins will be translucent and the meat cooked through when ready. Serve hot with your favorite dipping sauce.
Dipping Sauces
Sweet Chili
Mix sweet chili sauce with soy sauce and lime/lemon juice
Bought Hoi Sin (Chinese BBQ sauce)
Wonton skins can be bought in most big supermarkets now

For a change you can add prawns to the pork mix too, shredded pakchoi, or cabbage, cooked mushrooms (squeeze the water out of them first) or grated carrot

Thanks for the recipe, it sounds really tasty. If I can get the wonton skins I will try my hand at them :o)

ChuckFickens: I didn't use a site.
Mine came from Ken Hom's Easy Chinese Cookery vol. 1 - I copied it basiclly for measures, I'm so used to doing recipes by 'eye' it's not easy to tell people how much.
Can show me a past example please? - Of somebody showing a source - or is it just to have a go at me?

Well, as the only examples you've come up with is you, I think I can presume it's just you having a go at me. Examples from OTHER people, other than yourself I meant....do you do these things deliberately or .....anyway, don't bother yourself answering, I'm off on holiday now so I won't be around to read your no doubt facetious reply - ta-ta

yes they are ickle animals and special wonton trappers and skinners are employed to catch this rare and elusive beastie.

Does it really matter Chuck that Mercia didn't use a link. Do we have to do what is 'considered good practice'. Very unfair of you in my opinion and unnecessary.
