What would the approximate turnover of a mid-range hotel in the UK be?
I just want a really rough idea on how much you'd expect to turnover if you were running a small-to-medium hotel in Great Britain...

Define small to medium? I would say this is 20 to 60 bedrooms, but you may mean a different figure. What Food & Beverage facilites (Restaurant, Bar etc?). Location - i.e. a town centre hotel will have a far higher turnover that a seaside one where business will be seasonal?

I was thinking below 50 rooms, country hotel with a restaurant - any rough ideas on the turnover?

OK. Working on 75% occupancy rate throughout the year and an average room price of £120.00 per night this would be roughly £1.6 million.
Assuming your in a country location, your restaurant should attract about 75% of the guests per night. Assuming an average spend of £35 per night this would be roughly £.5 million.
Your income is therefore approx £2.1 million. To work out the potential profit simply deduct the overheads - Staff wages & N.I. contributions, utilities, rates, VAT bills per Qtr, stock (food & drink), crockery replacement, Maintainance of the premises, advertising, stationary, sundries etc.
