Rosti whats the right way to make it?

Going to try and make this, some recipes use parboiled grated potatoes and others raw potatoes grated,which is the best any swiss abers around doubt it lol!

i've been to switzerland and been up the eiger and eaten rosti there.
Rosti is the same sort of thing which they call in Germany Reibekuchen..You need some potatoes that are waxy not floury spuds you would use for mash .Peel them ,grate them on the roughest part of the grater ,then put them in a clean tea towel and squeeze the water out .
Grate a large onion and then mix that and a couple of beaten eggs ,salt and pepper ,and a spoonful of flour with the spuds .
You are looking towards getting a firmish texture ,not sloppy !
The get some oil really hot and take tablespoonfuls of the mixture ,put in the hot oil and flatten it with the back of the spoon .When it's a golden colour turn it over and cook the other side . They should be nice and crispy . You can cook several in a normal frying pan at one go .
6 large potatoes, peeled (peeling is optional)
1 large onion
2 eggs, beaten
1 teaspoon baking powder
salt, to taste
pepper, to taste
flour (enough to hold ingredients together, you'll be able to tell when you've added enough)
Vegetable Oil for frying

Cut peeled potatoes and onios into chunks and chop in food processor or grate them on the roughest part of the grater.Mix potatoes and onions together in a colander over a large bowl. Allow to drain.
Pour mixture into a large bowl and add beaten eggs, salt, pepper, baking powder and a tablespoon of flour at-a-time until mixture holds together.
Mix well. In a fry pan, heat oil
You'll need about 1/8".
Spoon heaping tablespoons of the mixture into the oil.
Flatten each spoonful with the back of the spoon to make thin pancakes
Fry until the edges turn a dark brown.
Flip over to fry the other side.
Drain on a paper towel.
Serve with apple sauce and/or sour cream.
Mmmmmm I've going to buy some potatoes :)
