if you have an email account, how many pop3's drawing down that account's emails can you have on various devices? what would happen if you accessed the account at the same time from 2 different devices?

One! I'm going to your android thread now as I assume this is about the same thing.
The first device that accesses your pop3 service would get the mail. If your pop3 service is set in default (delete mail after sent to client) you won't be able to get to it from any other device as it is gone. If planning to access your service from various devices, or indeed places, it is best to set your pop3 service to 'send mail to **** folder after download' or similar, and delete the mail on there manually every week or so.
If you get a lot of mail with attachments you may soon find that your go over your allocated allowance on the service and subsequent mail will be rejected so check frequently.

Your server should be able to tell you how many accounts you may have on the one service as they all are different.
