how does coral change when it is bleached?

I wonder if you mean when it appears bleached, in which case the coral is actually dead and coral only has colour while it is alive. I hope this makes some sense to you.
Coral bleaching is caused by rises in sea temperature, as a result of global warming. After being bleached by the warmer water (I don't know how this actually happens) the coral eventually just dies. Reefs can recover from bleaching, but it takes years.
