How to make homemade crisps

Best done in a deep fat frier or at least something with a temperature guage on it.

Peel potatoe 'Old' or main crop are best, like Maris Piper, King Edward or Rooster Reds

Heat oil to 170 degrees.

Ideally you need a mandolin to cut the potatoes thinly enough, else use a potato peeler to shave off thin slices.
Wash and drain well, dry on kitchen paper. carefully place a few slices at a time in the oil, not too many as they may stick, and you cool the oil down too much and they'll absorb too much fat.

Cook till golden and crisp, as opposed to black, and drain on kitchen paper. Sprinkle with salt or any spices you like, or something like Schwartz seasonings or mixes for mash -

Cheers mercia, is it not possible to do a healthier alternative in the oven or do they dry out?

it's like trying to bite plastic! no mate, 'fraid you need hot oil - you could always buy yourself a Tefal Actifry, that only uses a few of tablespoons of oil - the basket rotates and cooks them

Soounds good to me! Have you made crisps with sweet potatos or other veg ( I forgot which veg you can make "Crisps" out of but there were a few.

they are cooked in hot oil, they are drained on kitchen paper, what fat around the bowl? And as you've never tried them, i'd wait until you have - how and what do you think manufacturers cook them in - fairy dust?

I don't eat commercially available crisps (well very rarely) but regardless, your home made crisps will be full of fat.
You seem very terse when someone does not agree with you mercia. Chill.;0)
Mick if you deep fry at the correct temp and drain on paper, things are not greasy but everyone is different and lots of people don't like anything fried. I understand that too.

I get annoyed with people who haven't tried things and tell me they don't like it or it doesn't work. It's infuriating. I've been cooking for over 40 years, I do know these things from experience, I don't make them up. I don't eat fried foods myself, but I make sure that anything i do fry is crisp, cooked, and well drained on kitchen paper before I serve it, and i've never, ever had any complaints about something being 'fatty' in the thirty years i've been giving dinner parties
