Did you consider doing a search for "most recorded song".

I did that search and it is Yesterday by Paul McCartney (actually it is by the Beatles but only Paul from the group appears on the song, with a string quartet)

I'm sure both the songs mentioned hold some sort of record (every pun intended) but the song Summertime predates both and is still going strong.

I've managed to track down 210 different versions of Summertime, but only 112 of Yesterday. Any other contenders?
