select the text you want to format
on the tool bar you should have a group of 4 icons composed of horizontal lines.
click the one which has them all the same length

Click on the icon that looks like this in paragraph

____

____
The section for paragraph settings is on the home tab/ribbon and at the bottom left corner of that group are those for alignment. If you hover the mouse over each of them (i.e. just move the mouse pointer there without clicking) it tells you what they do.

Thanks to all three, but none of the suggestions seem to work when typing within a table.
Right click on the cell, select cell alignment and then choose the preferred alignment (probably the centre one).

Thanks again everyone but I now see the reason for my problem. If you want text justification to work don't include any carriage returns in your text. Silly me!
