Why is my carrot cake uncooked in the middle - I cooked it for the right amount of time (and tested it in the middle, the skewer came out clean); but when I came to cutting it, it was still 'raw' in the centre. So I put it back in the oven for another wee while, but its still not right. The recipe had 150ml of oil in it, which seemed quite a bit, could this be the reason? Thanks
I've had this happen once before.The quantity of oil is perfectly normal..same as my recipe. When I grate the carrots I squeeze some of the moisture out in a clean tea towel or some paper towel.It may help. If you like carrot cake,I made on Saturday,the carrot cake cheesecake which was on Britains Best Dish a couple of weeks ago. It's the most gorgeous dessert...
Was your cake tin the correct size? is your oven maintaining the correct temperature?
150ml of oil sounds ok-that's only about 1/2 a cup.
It's possible the carrots had a lot of moisture in them. I have often found that carrot cake needs a bit more time than recipes state.
Everthing is fine with the oven etc - I put the cake back in the oven, but I'm still not happy with it. A bit disappointed, never had a cake gone wrong!

I don't think I've ever cooked a cake that comes out the way the recipes says it will.
I guess oven temperatures vary. But I agree with pastafreak, I always seem to have to cook cakes longer than the specified time in the recipe. So I'd add a little extra onto your cooking time and pop a circle of greaseproof over the top during the last part of cooking so that the top doesn't get burnt.
