Yes, SPECIE - I haven't come across that before.

That gives C?N?E?L, but why CONGEAL?
Conceal - hide
Replace g(allons) with c(lubs)
hide= conceal
change C (clubs) to G (gallons)

I've worded that badly...conceal becomes congeal (get firm) by swapping c for g
