Bacon, Egg And Cheese Muffin

A bacon, egg and cheese muffin is a great breakfast sandwich and a perfect treat on the weekend. If you have a little extra time on your hands this is a wonderful breakfast recipe that you’re whole family will enjoy, especially children.

If you have a long day ahead of you a filing breakfast is important and will make a huge difference to how you feel. Bacon, egg and cheese muffins are packed full of energy and will keep you and your family full until lunch. They are a perfect start to a day.

Ingredients

  • 2 plain English muffins
  • 4 rashers of lean bacon
  • 2 eggs
  • Mozzarella
  • 1 tsp vinegar

Method

  1. Grill the bacon.
  2. To poach the egg boil a saucepan of water and add a tsp of vinegar. Crack the eggs into the water; it should take about 5 minutes to cook depending on how you like the yolk.
  3. Slice the muffins in half and lightly toast them on both sides.
  4. Place some grated mozzarella on one half of each muffin and grill until cheese is melted.
  5. Place the bacon on the muffins followed by the eggs.
