my hubby is not allowed bread potatoes,pasta,rice or a lot of sugar ,im struggling to find filling meals for him can you help thanks x

Stirfry with beansprouts, carrots, mangetout, etc and beef strips or prawns. Cottage pie with swede and carrot mash. Stuffed marrow.. Beef stew. Fish with parsnip chips and peas.

what's his problem, mally, is it a gluten free diet or something else?

he is diabetic and his sugar has gone sky high,the doctor has told him to stop eating the above otherwise he will need injections daily .we have looked at gluten free stuff but the sugars were too high

thankyou grasscarp never have thought of parsnip chips ,you have been a great help
peas , lentils , green beans , fruit and veg , meat , fish , eggs , nuts - all good nutritionally .
A lovely vegetable stew with swede, parsnips, carrots, onions, etc and some pearl barley and lentils. Flavour it with marmite and a tin of tomatoes.

I make a delicious lentil bake which you could have with carrots and green veg. (No soaking involved) Recipe here, scroll down for the mouth watering picture.

he is allowed all meats and white fish tuna salmon etc sausages without oats

we looked at gluten free bread in asda but the carbs were too high never tried making my own
Is he allowed cous cous (a lot of diabetics are) as that opens up fish, chicken, pigeon and lamb tagines.....as well as other dishes.

You can buy gluten free flour then make your own that way he won't feel deprived

thanks ecclescakerocks ive sent for 2 recipe books this morning
pork and beans......

*generous pack of pork belly slices
*2 medium onions
*as much garlic as you can handle......chop roughly and brown off in a frying pan

put into a large casserole dish:
*1 can of kidney beans
*1 can of butter beans
*1 can black eyed beans
*1 can of haricot beans.....all drained/washed through

bung everything together in the casserole dish and mix thoroughly.
for the sauce, mix together in a jug:
*1 pint beef stock (2 x cubes of oxo)
*2 generous tablespoons of tomato puree, worcestershire sauce, brown sugar
*2 teaspoons english mustard
*2 massive tablespoons of black treacle (it really sticks to the spoon, so just stick it in the tin and put 2 massive globs in the sauce)

thoroughly stir the sauce so all the liquid ingredients are mixed and then pour into the casserole dish, stir again and put the lid on the dish (make sure it is really on/secure, or it will dry and burn quite quickly in the oven).

bung into a pre-heated oven at 150-160 degrees.....and relax for four-five hours until cooked - check every hour to see that the lid is still in place and the pork/beans are cooking away. serve alone (for hubby) or with crusty rolls and butter (for you and others - part baked ones are perfect as you can turn up the heat in the oven at the end of cooking and cook the rolls on top of the casserole).

this recipe serves 4 people. good luck with changing your lifestyle....it is hard to begin with, but it will become second nature once you get things sorted properly. good luck! x

i will give that a go as he loves belly pork thanks lcg76 and have a nice glass of wine or 2 whilst its cooking x
mallyh - just contact any of us when you have particular ingredients and need some inspiration - a one-liner on your OH's condition may be useful to remind folk....Good luck- not easy to begin with but your repertoire will soon increase. For me, it would be the lack of pasta and the inability to scrunch a nice meringue or pavlova....
