I haven`t made greengage jam before but I do make other jams. I saw these in a rural farm shop and decided to make jam with them. I have looked thro` my recipes and can`t see a recipe. The usual rule is 1lb sugar to same of fruit and I guess some water is needed. If anyone has a recipe I would be keen to see what the ingredients are. I guess it doesn`t need any lemon juice but it could be added. Thanks for any help.

Do it like Plum or Damson jam .Just check for acidity.

I made some a couple of years ago and it was lovely, as giveup says, use a plum recipe.
I tend to use a bit less sugar than recommended in most recipes as I find that using so much can be over sweet and mask the taste of the fruit, it doesn't seem to affect the set.

Thanks for the extra help Nibble. I had stoned them so I might put these in a bag as may release pectin.
suggest the stones should be in, as they're the source of the required pectin.
